This frittata is quick and delicious. It’s packed with vegetables. You can make it the night before to heat up and enjoy with your family between opening stockings and gifts. This dish is also delicious cold.
When do you open your gifts for my friends who celebrate Christmas? We opened all our family gifts Christmas Eve when I was growing up. We would all go to church and then come home for dinner. Then we’d open the gifts one-by-one in the living room. I was the “Christmas Elf” who distributed gifts. We’d run to the stockings on Christmas morning (Santa never wrapped gifts at my home) and see what he brought.
We have changed our ways a bit since we married and combined family traditions. We go to church on Christmas Eve, preferably early in the morning, and then we come home for either seafood gumbo or heavy appetizers that I prepared earlier. We set out milk and cookies and read The Night Before Christmas before putting the children to bed. We rush to open gifts one-by-one, but I’ve passed on my duties as a Christmas elf to the next generation.
This is a great way to extend Christmas morning. Normally, coffee and tea are the first things I do. They’re quick and easy and allow me to enjoy the morning without spending too much time in the kitchen. In the past we’ve made cinnamon rolls and breakfast casseroles that were delicious. It can be made 1-2 days in advance and stored in the refrigerator to serve cold on Christmas or to heat up at Christmas morning. The sundried tomato and oregano add a unique flavor to this dish. It is also unique because it contains hearty vegetables. You can also serve a simple baby arugula or fruit salad, or even a cinnamon bun, to bring back the joy of Christmas morning.
