In my mind, grilling is synonymous with protein. grilled Shrimp is one of my favourite summer dinners. I love cooking meals outside on the barbecue. This means that I can keep my kitchen cool and have fewer dishes to wash (although one could argue that the grill grates need a good clean). But I’m not sure why I tend to forget how great grilling is for vegetables. I believe that slightly charred vegetables are the best way to enjoy all the summer produce!

Although they’re delicious with just a dash of oil, salt, and pepper I like to take it up a level with a flavorful marinade. This marinade is a summer favorite. The cayenne and its subtle sweetness enhance the flavors of the charred vegetables. The sauce is delicious and can be drizzled over cooked vegetables.
