How about “Traditional Chickpea ‘Chicken’ Salad”?

This delicious vegetarian version of classic chicken salad has crunchy celery bits and slivered nuts throughout. It is a perfect combination of flavor and tenderness. This chickpea salad may make you never want to make chicken salad again.

We’ve had a tough week. Hailey was infected with some virus, and it slowly spread to David and me. It feels like we have been fighting germs for the past week. Kaitlyn didn’t get it, but had some rough nights, so I also had some rough nights. She started crying around 1:30 AM on one of these nights. After some comforting and cuddling, she went back to sleep at 2:00 AM. But what about me? I was AWAKE. Although I knew I had a virus and tried to stay still, my mind was only on food. Typical. Somewhere in this half-dream-half-awake state, the idea of a chickpea chicken salad came into my mind. I would have gotten up at 3 AM to make my dream come true if a grocery shop was open. Instead, I wrote down a rough recipe and went back to bed by 4 AM.

We’ve all been trying to recover from that week. Hailey is over it. I’m getting through it. And David? He just hit the wall. Poor man. Today I went to the store to buy the ingredients for my chickpea and chicken salad.

After 15 minutes of chopping, I jumped in. It was exactly as I had imagined! It was delicious and I couldn’t wait to share it. In fact, I so excited that I asked David to snap a picture, even though I was in all my post-workout-haven’t-yet-showered glory. It doesn’t really matter that I didn’t have any props or styled the picture. This chickpea and chicken salad is so delicious, it doesn’t need any fancy photos.
