We are currently in the doldrums with our kitchen renovation. I felt a bit foolish for thinking it would only take two weeks. Our research was done and we lined up everything, but it turns out that our expectation of a 2-3 day turnaround on the countertop will take more like two weeks. It’s my first time renovating, so I guess I was ignorant. I know that it will all be worth it in the end, but I have realized how much I appreciate a working kitchen.

The anchor of most of my week is meal planning. Here’s how I plan my meals. It’s so helpful that I created a printable menu planning template. The reason I enjoy meal planning is not because I am a fan of; rather, it’s that it makes my day run smoothly, relieves my mental burden, and helps us save money.

It’s been difficult to plan meals during the renovation. The oven is functional (a blessing!). We have no stovetop, prep space, sink or utensils (which are currently piled in the living area). I am choosing to look at this time as an opportunity to remind myself how wonderful it is to be able to cook and bake in a fully functional kitchen.

I mentally listed out the current family favorites dinners. Everyone would be happy if we could keep rotating between these. Maybe this will be the two-week meal plan I use when I finally get back into the kitchen…hmm. That’s a great idea.
