This flavorful, simple Greek side salad without lettuce is a family favorite. This salad is perfect as a side to any meal or with grilled poultry to make it the main dish.
What food will you always associate with childhood?
There are many: Mom’s Blueberry Cobbler. Lemon herb and butter broccoli. Marinated Chicken and Noodles. Chicken schezwan. Mom’s spaghetti sauce. Fresh tomatoes, balsamic vinegar and salt & pepper. You can also try the hot and sour chicken soup or broccoli and chicken from Happy China II.
These dishes bring me back to happy memories and give me a great feeling.
I think of what food will one day give my daughters the same feeling. Food has the power to connect us even across time.
I make certain foods in the hopes that they will remember them fondly. When they’re feeling sick, I make them homemade chicken and vegetable soup. We also bake chocolate chip cookies on Christmas Eve because Santa told Hailey at age 2 that these were his favorites.
I’d like to believe that they will remember fondly our weekly fajita nights and how much they loved the spaghetti sauce their mom used when they were growing up.
Sadly, I imagine that they’ll also remember having to eat a raw garlic clove at the first sign a throat tickle.
This Cucumber Tomato Greek salad is sure to be a favorite.
The girls will come into the kitchen when I start making this lettuce-less Greek Salad and squeal with excitement. This is a simple salad I have been making for years by taste. I wrote down all the ingredients to share with you.
