Yesterday, we went to a friend’s home for a cookie exchange with kids. My kids and I had already decided on the cookies we would make. I quickly searched my blog for my favorite recipe, only to discover that I hadn’t shared it before. What? !
All my childhood favorites are here, from Suzie’s chicken to Suzie’s chicken, and even my brother’s favorite Mexican dip. Not my favorite Christmas cookie, though? Now that’s changed.
Since childhood, this cream cheese thumbprint cookie has been my favourite. There are many reasons for that. The small size and bright colors, the mild cream cheese taste, as well as the fact that it is not overly sweet make this cookie my favorite. You can easily customize them to match your favorite color. These cookies will add a pop of vibrant color to any plate you’re bringing over to your neighbors.
It is easy to do (if you remember your butter and cream to soften). Mix sugar, cream cheese, and butter. Add the vanilla and egg yolk. Add the flour slowly. Refrigerate the dough an hour. Roll, press with thumb, bake and fill with icing. Devour.
