It is impossible to deny my love of fall. I know I have already talked about how I am burning candles at an alarming rate, taking walks in the crunchy leaves with my girls and that I already have several pumpkins waiting to be carved outside. This rich, slightly sweetened and subtly spiced sweet potato spread brought the cozy feel of fall into my kitchen.

The recipe is easy to make: just mix the ingredients together, cook on the stove and simmer.

After 30 minutes, the sweet potatoes butter will be thick, creamy, and smell like an autumn kitchen.

The possibilities are endless. It should keep for three weeks in the refrigerator. Spread it over muffinsor cookies. Add it to oatmeal, and top with toasted pumpkin seeds. Use it to top pancakes.
