We’ve enjoyed a lot of stews and chilis, but now that SPRING has arrived, I want to eat lighter meals. When I think I can’t take one more blustery, rainy day the sun shines through. We didn’t have many windy days here in the Carolinas, but we did remove the cling-on snowflakes on the windows. I guess it’s officially spring now!

When I focus on proteins, sometimes I tend to forget about the wonderful flavors and textures that plant-based foods offer. To boost nutrition and spice up my meals, I am switching to plant-based spring recipes. It’s easy to add some grilled fish, seasoned steak, or baked chicken to any of these recipes to increase the protein content.
