How about “Rice Cooker Recipe: Cilantro Lime Rice”?

This cilantro lime rice will be a hit in your rice cooker. You don’t need to use a rice cooker. It is still one of my favourite gadgets for cooking in cooler weather. This rice cooker is my favorite because it has a ceramic bowl that’s nontoxic, but still easy to clean. Other models tend to have nonstick interiors, which are great until they start flaking into your food.

Back to the cilantro-lime. This is a delicious base for burritos bowls or enchiladas. It also makes a nice side dish with some black beans and diced avocado.

This cilantro lime rice is easy to make and nutritious.

  • White Basmati Rice (although you can use brown rice if you prefer).
  • Broth (I prefer to use Kettle & Fire Bone Broth because of the flavor and added nutrients that it provides- remember to use the code AHS to get 20% off your order).
  • salt
  • Butter
  • Cilantro (you can either chop it fresh or use the freeze-dried version that is available in the produce section).
  • Fresh Lime Juice (from 1 to 2 limes depending on the size).

That’s it! Rinse your rice, then add it to the cooker along with butter, broth and salt. You can cook the rice in the same way as on the stove. Add the lime and cilantro after cooking.
