If your child is under three years old, I recommend keeping meals simple. As often as I can, I try to include at least one protein source, one carbohydrate (bonus points if the carb is a veggie) and a healthy fat. When I can combine those macronutrients in a toddler-sized meal, that’s even better. I am pretty excited.

Pre-heat oven to 350 degrees. Mix all ingredients in a large mixing bowl.

Spray the mini muffin pan (or I like that mini pan option, which makes it so easy to pop them out!) with non-stick spray. Pour the mixture into each of the cups, pressing it down as you go.
