Are you a meal planner? I’m a meal planner through and through. You can see the weekly menu plans that I have shared. You know what else? This doesn’t mean I don’t need a list of ideas for last-minute dinners.

I sometimes plan ahead and then life happens and plans change. I am left scrambling for a quick and easy dinner. Today I am sharing some of my favorites last-minute weeknight dinners and tips that will help you when you are in a hurry to cook something .

Last-Minute Meal Ideas

Rotisserie Chicken + Salad + Rolls

This combination is perfect for a weeknight staple dinner. You can roast your own chicken, or buy one from the grocery store. You can pull it out and place it on top of a salad, which you can make as complex or as simple as you want. For toddlers and younger kids, it is best to serve the chicken separately and with dipping sauces. It can be customized with any dressing, but even a simple squeeze of lemon and a drizzle olive oil is delicious. Make it wild and make a kale with goat cheese, craisins, or anything else you like! Serve warm rolls with butter and enjoy a quick, easy dinner.

Crispy Chicken + Tortillas + Iceberg + Buffalo Sauce + Ranch

A quick and easy dinner is easy to make with crispy chicken. I purchase in bulk from Butcher Box who offer crispy strips and nuggets that are delicious, with a simple ingredient list. They bake crispy and quickly become a tasty dinner when you add tortillas, crunchy lettuce, spicy or mild sauce, and/or tortillas. Buffalo sauce and ranch can be drizzled or dipped. This is delicious even if you don’t fancy it up with blue cheese, tomatoes and onions.
