Some recipes I can get right the first time. Others require a few rounds to test and approval from my family, including my Hailey who loves variety and my Kaitlyn who is more selective.

The Apple Cinnamon Oat Muffins scored high on every level. That’s great because I can make them in large quantities to snack on throughout the week or freeze some for later.

These muffins are a perfect make-on-Sunday-eat-all-week option for several reasons. They are also a healthy breakfast option. The muffins are loaded with oats and freshly grated apples, as well as cinnamon. They make a healthy, low-sugar start to your day.

It does take some prep work but you can use your food processor to grind the oats and grate an apple. Kids love to do this because it makes loud noises. It is really quite easy.
