Happy Monday morning from Tennessee! Does it sound like I’m repeating myself when I say the mountains are my favorite place? After a quick two-night visit to bearolina, we are headed home to return some Adirondack Chairs, replace the lights, check inventory and squeeze in some fun at Dollywood’s Splash country. Next post will cover that, but today we’ll look at our weekly menu plan.
Monday
I wanted to try a new recipe, so I tried Asian Style meatballs by The Defined Dish. The family gave the recipe a “so-so” rating. I liked it, but they didn’t. Just don’t like Asian-influenced food. What went wrong? I served this with roasted baby broccoli, which I blanched and roasted.
Tuesday
I love soup. I wonder if I should repost the recipe because I don’t make it as described with zoodles. I cook the broth according to directions, then add brown rice and millet noodles and shredded meat. It’s so flavorful!
