How was your weekend? It was nice to stay at home a lot. It was time to take walks (and be caught by sneaky spring showers), to work on some projects (replacing light fixtures in the closet of the master bedroom and to meet with a designer to discuss some ideas for sprucing up the kitchen), to play some games and to do some chores (replacing lights in the closet of the master bedroom and meeting with the designer to discuss some ideas).
David took Finley and the kids to a nearby park so that I could do some work. After playing tennis, David and his wife prepared a delicious salmon dinner. We then crashed on the couch. We were exhausted. Maybe it was pollen. We all went to sleep early after watching an episode of Alone, the survival show we love to watch together.
Mother’s Day is a day to show appreciation for all the mothers out there. Your work is important. For those who feel heartache, on a Mother’s Day or any other day for that matter, I hope they felt heard and still gave themselves the space they needed. With each passing year, holidays can become more difficult. We have to learn how to balance the joy of the season with the pain they can bring.
Monday
Cod fish tacos bowls, because I’m not a fan of wraps anymore. I made a beer batter with 12 oz of beer, 1 cup of flour and 1 egg. Then, I seasoned and peppered my cod and dipped it into the batter. Finally, it was pan-fried in a half inch of oil for 4 minutes on each side. I served it with rice and a quick slaw of cabbage, sourcream, mayo lime juice salt and pepper. Topped with cilantro and green onions.
