How about “Lemon Zest Spinach Muffins: Perfect for Spring”?

I had originally planned to make a simple muffin- maybe blueberry? – and turn it green by adding some spinach. The secret is revealed in the first paragraph. You can add spinach (blended in a blender) to muffins for a nutritional boost without changing their flavor. But don’t run away just yet. I have something better for you to share.

Spring is on its way if you haven’t yet felt it. Yesterday’s 70-degree sunshine confirmed this. And to me, there is nothing more springlike and fresh than lemons.

But I ended up with an incredibly bright, light, and not overly sweet muffin.

They are delicious on their own, and a nice change from the usual muffin flavors. The muffins go well with tea or fresh fruit in the morning, as well as with afternoon tea.

When I began to think about how these would be perfect for a brunch in the spring, I saw a vision of lemon drizzle and knew I needed to take things up a level.
