This past weekend, we officially started the summer season. We took the boat out for the first time in the season. We also met up with some friends and watched the kids playing king of hill on stand up paddle boards.
We have finished our Summer Box, but I won’t let you open it until today (June!). We cheated and indulged in a highly anticipated activity – making POPSICLES. Not just any “freeze-juice in a Dixie Cup” popsicles, though those are awesome too …), festive and watermelon-flavored popsicles for summer!
The multiple layers of these watermelon popsicles may look like a fancy treat, but the process is not difficult. It’s a real treat! These are fun for the kids to make and even better to eat. These were eaten pretty quickly by us, but they would make a great summer party with friends and kids OR, (taking a tip from the rooftop bar of Charlotte), for an adults poolside shindig. Just turn them upside down in a glass filled with Prosecco. Just saying…
