Hello, Monday! How was your long weekend? It was good for us. After a soccer game on Friday, we went to Mexican food for dinner. We had friends over on Saturday afternoon to watch the football game and celebrate “the Haileys”. Our Hailey is celebrating her birthday this week, and their Hailey was celebrating last week. So we always get together for a party! Hailey requested mud pie with Oreos and gummyworms. I also made white chili dip and homemade guacamole.
The rain added to the atmosphere. The sounds of college football and snacks, as well as family and friends, bring back so many memories for me.
If Saturday was the day for leisure, Sunday was the exact opposite. Sunday was productive. Sunday was productive. Meal planning, shopping, running errands, working out, and food preparation. I cooked eggs in the mornings for David, marinated chicken to be served for dinner and boiled the chicken to shred for my favorite smoky, deli-style chicken salad.
The girls practice soccer all night long on Mondays, even through dinner. This year I decided to pack dinners in the girls’ new lunchboxes so that each girl can eat as the other practices. Tonight, they will have chicken salad wrapped in carrots and ranch.
