I haven’t written a recipe in a while. It’s probably because I make so many recipes on the fly that I lack the photos or details to justify a permanent post. Last week, I made this delicious slow cooker chicken curried and it was so easy to make and turned out so well that I made it once again yesterday. I wanted to put it on my blog to allow me to link to it because it will be a meal I make over and over again.

The only preparation required for this slow cooker chicken curry is to chop the onions and open the cans. This recipe is also very versatile. The first time I made this, I added a red bell pepper and it turned out great. You can also add diced sweet potatoes or other hearty veggies at the beginning. You can add baby spinach when you add the carrots and frozen peas at the very end. Versatile.
