How about “Delicious Casserole Featuring Summer Squash”?

Let me share one of my favorite childhood dishes with you: summer squash casserole.

It’s yellow squash season, whether you grow them in your backyard or simply see the abundance of them at the market. It grows quickly and vigorously, and it can be difficult to decide what to do with all of it.

This summer squash salad with quinoa, herbs and spices is not only delicious but also super easy to make.

This was a dish my mom used to make when I was growing up. It’s not something that comes to mind as a kid-friendly meal (or are it just me and my children who don’t like casseroles? This was one of the dishes my mother made that I loved.

When I was growing up, summer dinners were often dominated by southern vegetables. It’s like the good ol’ meat and three. Some of my favorite veggie dishes were steamed okra with tomatoes and and black eyed beans with hot pepper sauce.
