Breakfast Late
Sweet Potato Hash – I normally use leftover roasted potatoes but I recently discovered that I can get the same result by dicing a sweet potato and sautéing it in olive oil. I then cover it, let it steam, and it is ready within 15 minutes. It’s not fast, but it’s also not bad. Add some greens and onions with an egg and you’ve got one of my favorite morning meals.
Avocado egg toast This one made me feel like it was summertime. Toast, mashed tomato, avocado (they’re not summer tomatoes but Compari are always pretty good), and an egg fried.
